I think she does care. She’s very obviously upset when there is no one there to witness. To me, t his says real emotion. I think maybe Roz doesn’t know how to relate to people in an open and honest way. Maybe she never learned how to achieve the results she wants without manipulation.
But again, it’s the whole “I don’t care that what I did is wrong, I care that it resulted in losing you” thing. The latter cannot elicit sympathy from me without the former.
While I can sympathize with both Jacob and Roz, thanks to the latter’s deceitfulness, she ranks lower in the balance. Jacob is trying to grow, and Roz either hasn’t realized she need to grow or can’t or won’t grow. Until she can break out of this self-sabotaging behavior, a healthy relationship will continue to elude her. (And it will be a tough road to walk, if she figures out that’s the path she needs to take.)
I’m not saying she needs to be in a relationship with anyone, unless they are also a master manipulator and/or capable of seeing through her bullshit and willing to deal with it. I’m just saying that I believe she does care about Jacob and that it’s not contingent on him not questioning her.
Frankly, I’m just glad to see some genuine private emotion from Roz, because she generally reads like a sociopath.
I can see that Roz cares for Jacob through a personalized agenda to “help” him. But Jacob does bring up a point that he wants a more “normal” relationship with someone who isn’t Roz. But I think that Roz is the girl for him by addressing his problematic behaviors in a “subtle” manner. But I wonder if Jacob even notices these actions of Roz, he seems more focused on his sex addiction and ignoring his other addictions.
I don’t know whether I agree or disagree. On the one hand, Jacob wants a “normal” relationship and he sees Roz too clearly to believe he can have that with her. At the same time, I don’t believe that Jacob idea of a normal relationship is going to work unless the sexual addiction is no longer an issue. As to Roz, I think she needs someone who sees her and can see through her manipulations, which Jacob seems to be able to do to some degree, but she needs someone who isn’t going to judge her for being the way she is. Someone who can maybe help her learn to deal with people in a different way.
I don’t know anything about the recovery process for sexual addiction. Most other addictive behaviours are dealt with by removing them from one’s life, but I don’t see most people embracing a life of celibacy so as not to fall back in to a sex addiction. Certainly, I don’t think Jacob could have that “normal” relationship if he became a celibate for life.

Losing what’s “mine” is a perfectly common reason to get upset, and a sociopath often doesn’t understand other people’s frustrations well enough to understand how to respond proportionately to things that upset them. (From their POV, they’re the only one that really feels things.)
In fact, being easily frustrated and irritable is considered one of the warning factors that someone may be a sociopath or have some other form of ASPD.

Well, this is not Its Walky; it’s a spinoff. I -for example- never have (and probably never will) read Its Walky, and just read enough of the wiki to get by here. Therefor, one would hope, -even within your assumption- we would see at least one other true-love pairing, for the benefit of someone like myself. I’m rooting for Amber and Mike.

OTPs can evolve though, even for authors. From my own meager POV, I’ve only really got one that’s set in stone with my own material, and I can only half-count it because I have yet to actually write any canonical material set in that continuity of mine.

I still think he was a unnecessary addition, but this storyline was well executed and managed to get me invested in the ultimate outcome. All I can say is Jacob is in the right here. Roz has problems, and while it’s clear she does really care, she has zero regard for him or his problems – as she brazenly dismissed them yesterday (All the while bringing in the Shop-Vac Kitty to devour Jacob’s stuff behind his back).
Excellent example of how “Caring” and “not being a manipulative jerk” are not the same thing. You can care deeply about someone while still being terribly destructive towards them, especially if being terribly destructive is the only way you know how to interact with people.
