     Actually, they are (based on what I have seen in the books) either female or male at any given time… but they are able to switch. If I understood it correctly, they usually choose to stay one gender for most of their life.

       No, they’re hermaphrodites. The gender difference is a mental thing. Biologically, they have both sets of reproductive Hutt organs all the time.
